Currently I have MSI Optix MAG271CQP (144hz 27" 2K VA) as main screen and MSI Optix G24 as second screen.
I'm going to make the MSI MAG271CQP my second monitor, and buy a new 32" 144hz+ and 4K as main screen.

Thus far I've selected these three monitors as options: Gigabyte M32U, Dell G3223Q, Gigabyte AORUS FI32U. Though these are all three IPS panels, the monitors I have now are both VA.

I've heard the contrast of IPS can be quite bad, but colours are generally better, any advice?

They’d all pretty much display CS:S smoothly, so you’re good with any

I switched from VA to IPS recently, and the color accuracy on IPS panels is really impressive—way better for things like photo editing and gaming. However, the contrast isn’t as strong, so blacks might look a bit greyer compared to VA. If you’re used to the deeper blacks of VA, it might take some getting used to. Out of the ones you’re looking at, they’re all great choices, but seeing them in person would help a lot. I’d also recommend checking out user reviews to see if any specific issues come up frequently.

I recently made the switch from VA to IPS for my monitors. The contrast on IPS screens is definitely not as strong as on VA panels, but the color accuracy and vibrancy are a big upgrade. Out of the three options you’re looking at, I’d lean towards the Dell G3223Q. It has fantastic color performance and brightness. I found the Gigabyte M32U and AORUS FI32U to be good too, but if you want the best colors and overall quality, the Dell's a solid choice.
